Bikini Recipe

Makes enough for 10 people

To make the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Premix (makes 850ml, enough for 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Method

Making the Syrup: Put the listed components in a saucepan, heat until it reaches a light boil, mixing so the sugar melts. Then, take off the burner allowing it to reach room temperature completely. Transfer into a sealable bottle, seal and refrigerate it in the refrigerator, it will last for around one month.

To make Cocktail Base: Mix all the spirits and syrup into a sizeable container, let it rest for one hour, then filter it preferably using a fine cloth, making it perfectly clear.

For serving: Measure 85ml of your cocktail base into your stirring glass containing ice, and stir lightly for about 60 seconds to chill. Pour into an chilled martini glass or equivalent, decorate with the cranberries and finish using a light spray of mandarin oil over the top.
